What’s Cloud Bread?
Cloud bread, in fact, has been around in different forms for years. It is not technically classified as bread, since its only ingredients are egg whites, corn starch and sugar. There are variations of Greek yogurt, cream cheese and delicious ‘cloud eggs.’
Cloud bread is like a lighter form of an angel food cake that looks like a fluffy round loaf of bread.
How to make bread from the cloud

Three egg whites
1/2 teaspoon of almond extract
2 tablespoons of sugar
1 tablespoon of cornstarch
Food colouring and toppings, optional
After preheating your oven to 350 degrees Fahrenheit, separate your egg whites and beat them until they start foaming. “Add to the flavouring, sugar and cornstarch, slowly, and beat until firm peaks appear. Separate and gently fold the food colouring into two separate bowls to form a rainbow. Using a spoon or spatula, place the mixture on a baking sheet covered with parchment. Shape into a cloud and bake for 20 minutes. Take the fuck out, tear and enjoy!

If you want to change things, play with your ingredients. “You can use almond essence and add sliced almonds to the top, add some cocoa powder to make a chocolate version, and maybe drizzle with chocolate syrup when taken out of the oven,” she says.

Keto-friendly cloud bread is having a moment, too. Debuting with the Atkins diet back in the ’70s, this low-carbon, gluten-free version skips sugar and cornstarch and typically features eggs, baking powder, full-bodied cream cheese and salt.
The tried and true original Atkins Cloud Bread Recipe calls for:
3 tablespoons of cream cheese
1 teaspoon of stevia
1/4 teaspoon of tartar cream
Preheat the oven to 300 degrees Fahrenheit and carefully separate the eggs. Mix the yolks, cream cheese and stevia in a bowl. In the other bowl, beat the tartar cream in the whites until they form nice peaks. Fold the yolk mixture in the egg whites until blended and place the mixture in 10 rounds on a greased baking sheet. Bake for 30 minutes until golden brown and cool for a bread-like consistency.
